calculating the correct OU

Can I have my web page setup so that if my technician chooses London as a location and that the machine is a desktop it will be able to add the machine to the correct OU structure e.g

ou=dekstops,ou=london,dc=domain,dc=local

all of my OU structures are uniform for locations, i assume would need a requirement that they have to enter the value

A possible solution could be to store the location specific part of the OU in the Database per location (like ou=london,dc=domain,dc=local for location "London", etc) in the MachineObjectOU property. Then have a custom script that simply adds "ou=desktops," at the beginning of the MachineObjectOU property if "IsDektop" is true or more likely having several conditions for IsLaptop, IsDektop, etc. . You have to use a custom script (either called directly from the Task Sequence or as UserExit script) as the property has a value already and gather wouldn't override this value if it's set already.
